INGREDIENTS:
1 egg
1 ripe banana mashed
1/3 Cup Forty Thieves Salted Macadamia butter
1/4 Cup maple syrup
2 Tbsp melted ghee/coconut oil
1/2 Cup almond flour
1/4 Cup coconut flour (sifted if necessary)
1 tsp baking powder
1/2 tsp vanilla extract
mini dark chocolate chips
Combine wet ingredients first, then add in your dry ingredients and mix well. Let the mixture set for a minute to allow the flours to hydrate.
Spread the mixture into a lined loaf tin and add extra choc chips if desired.
Bake for 20-25 min at 170C, or until a tooth pick comes out clean, using tinfoil if needed.
Let cool before putting the icing on top.
For the icing, mix ingredients together in a small bowl & refrigerate until ready to spread over the cooled cake. Add sprinkles of choice, then cut and enjoy! Store airtight at room temperature, or keep in the freezer/fridge to last longer.
