INGREDIENTS:

1 Cup rolled oats
1 Cup coconut flakes (option to toast these)
1/2 Cup chopped peanuts
1/2 Cup Forty Thieves Peanut Butter
1/4 Cup maple syrup/honey
3/4 Cup chopped chocolate/chocolate chips (ideally around 70%)
3 Tbsp coconut oil

METHOD:

  1. In a large bowl, add the oats, coconut and peanuts and combine well
  2. In a microwave safe bowl, add the chopped chocolate, coconut oil, maple syrup and peanut butter. Microwave in 30 second intervals, until the mixture comes together (stirring in between) – this may take 2-3 rounds (being careful not to burn the chocolate!).
  3. Stir the oat mixture with the peanut butter mixture until well combined.
  4. Press firmly into a lined loaf tin, making sure to use a back of a spoon to ensure the mixture will remain together when it sets. Optional addition, spread a little extra melted chocolate to the top to seal it all together.
  5. Cover with cling film, then place in fridge overnight, or the freezer for 4 hours. Using a sharp knife for cutting, cut the slice into 15 squares.
